Tailgating season is here and what better tailgate fare than something that is easy to prepare so you can relax and enjoy the tailgate and game! I recommend The Bacon Broccoli Salad found in Tampa Treasures and the Pulled Party Pork found in The Life of the Party.
Pulled Party Pork
Life of the Party, page 93
1 (3-lb) pork tenderloin or Boston butt roast
1 cup water
1 (18 oz) bottle prepared BBQ sauce
¼ cup packed brown sugar
2 tablespoons Worcestershire sauce
1 teaspoon each salt and pepper
Combine the pork and water in a slow cooker. Cook on high for 7 hours. Drain, reserving 1 cup liquid. Shred the roast in the slow cooker with a fork. Add the remaining ingredients. Add the reserved cooking liquid if necessary. Cook on low for 1 hour. Serve on rolls for sandwiches if desired.
Bacon Broccoli Salad

1 lb bacon
1 large bunch fresh broccoli
8 ounces Swiss cheese, chopped
1 large onion, chopped
¼ cup mayonnaise
2 tablespoons lemon juice
¼ cup sugar
24 hours before serving: Cook bacon in microwave or skillet; drain; crumble. Remove stems and leaves from broccoli; chop florets and tiny stems into bite-size pieces. In large bowl place bacon, broccoli, cheese, and onion. Mix mayonnaise lemon juice, and sugar; pour over broccoli. Refrigerate 24 hours.
