Paradise Salad

If you are someone who loves eating salad but needs something new the Paradise Salad is delightful! If you could combine a pina colada and a salad this would be it. This is the most refreshing salad I have ever had by far. It’s fun by the pool or on the beach. It is fun with chicken or with seafood. You can even use the delicious dressing to pour over a piece of grilled chicken or fish-it is so good! After the first time I created this salad, it was such a hit in my house that it then became my signature salad and I have made it for all parties that I go to or throw-everyone just loves it! The best part is that it takes about 10-15 minutes to make. Just follow the following simple steps:

You start by combining fresh lettuce with pineapple, strawberries, grapes, blueberries, apples, star fruit, and glazed almonds-and the salad is done! The next part is the dressing, which is also super easy. It has 5 simple ingredients: mayonnaise, sour cream, cream of coconut, lime juice, and apricot preserves. All you do is combine all of these ingredients in a separate bowl and then pour it on top to make the most delicious salad on a hot summer’s day! Also don’t forget that if you are making a large amount and need to keep the rest, it is best to drizzle some lemon juice to avoid browning. Enjoy!

Paradise Salad (Capture the Coast, page 50)


2 (5-oz) packages spring salad mix

4 cupes chopped fresh pineapple

2 cups sliced strawberries

1 ½ cups grapes, cut into halves

2 cups blueberries

2 cups chopped Granny Smith apples

1 start fruit, thinly sliced crosswire

½ cup honey-roasted slivered almonds


¾ cups mayonnaise

¼ cups sour cream

1 (8.5 oz) can cream of coconut

3 Tablespoons lime juice

2 Tablespoons apricot preserves
