At this point, the recipes fit the theme, passed the taste test, fit a menu – now we had to decide if we had a good cross section of recipes . They were all dropped into a spread sheet (yeah, my favorite!) and we started sorting them on many characteristics. For example, for our appetizer section, we wanted a selection of hot apps, cold apps, dips, individual portions, variety of meat, cheese, veggie, etc. and not too much of any one characteristic. Some recipes that were similar were put through “head-to-head” taste challenges. Once they were all sorted we kept “best in class” and rejected duplicate styles or flavors.
We submitted approximately 100 recipes (plus or minus 10% for layout fit) plus accompanying head notes and 25 sidebars, both of which also were subject to fit.
